What’s going on at Boca? The Mediterranean tapas restaurant in Stamford has papered its windows after just five months. I’ll admit I’m surprised. The menu at Boca was bright and refreshing, and the dishes were well-executed. The night I ate there this fall, Boca was doing good business. What now? We hear the place is being refashioned into a fish restaurant. We’ll let you know when we get more details.
Thanksgiving’s less than a week away, and last night I started thinking about the menu. Mashed potatoes were first on the list. A parade of starchy fall and green vegetables passed through my mind, and I started thinking about texture. How to vary the tastes, textures and shapes… Baby turnips… Tender baby turnips cut lengthwise so they look like hearts, and sautéed in a cast iron pan until caramelized.
