World Peace Cookies are cocoa shortbread with chunks of bittersweet chocolate. They have a sandy-chewy texture, salty-sweet flavors, and chocolate and butter. They were developed by Pierre Hermes, adapted by Dorie Greenspan, and spotlighted as a “Genius Recipe” at http://food52.com.

I made World Peace cookies this weekend. I thought I’d send some to family, see if these cookies actually could produce world peace.

The dough is formed into a log and refridgerated for 3 hours before being cut into cookies. If they fall apart, just mold them back together.

But the cookies were so good, so thin, crisp and buttery, with that touch of salt, and the soft chocolate… that we ate them all ourselves.  We must make them again — double batch!
