I’m a big fan of leftovers, of transforming last night’s dinner to something even better. My husband had roasted a pork shoulder, and after two days that was getting boring. So I used the pan drippings to make gravy. I sautéed onions, carrots, and peas and added them to the gravy with cubes of pork. But the touch that made all the difference in this homey dinner was the scrap of pie dough I found in the freezer. Rolled out, it just fit over the top of the baking dish.
